The photos below are from snowy spring in Alaska (mostly March 2023). I am happy we had our adventures living there half of each year 2022-2025, and equally happy to have different challenges now. C is going to miss spending the summer Alaska.

One of our joint goals in retirement is to eat healthier. Hopefully this goal isn’t as time consuming once we have a routine

It has been significant effort to plan healthy meals that we might both enjoy, shop with meticulous label reading, prepare food, and clean up afterwards. Trying to eat healthy takes hours most days. Sometimes I enjoy it and other times it seems relentless.

C encourages me to feel ok about spending more on groceries. It is nice to barely hesitate to buy raspberries or the high fiber tortillas that I considered too pricy before.

We are eating more fiber (such as more beans and raisin bran), and less saturated fat, salt and sugar.

My new favorite lunch is “not ramen” with barley and red lentils instead of noodles. Below also included leftover venison broth, onions, mushrooms, baby bok choy, and cress. C isn’t a fan, but I love it.
